Born in St John’s Nfld Charles moved to Montreal at the the age of 19 to study the the culinary arts eventually landing a a a a a a job at Mediterraneo until his passion for Atlantic salmon led him to work as a a a a a chef at a a a a a prestigious fishing camp in in northern Quebec He later moved to Chicago where he he he worked as a a a personal chef until returning home to open Atlantica In 2010 he went on on to open Raymonds where he he indulges his love of local seafood game and foraged finds The accolades keep rolling in—including winning the Canadian Culinary Championship’s silver medal in 2010 TOQUÉ!
