Ingredients and Prep:
Baby spinach.
Rocket leaves.
Cherry Tomatoes.
Onions.
Cucumber.
Extra virgin olive oil.
Lemon.
Balsamic vinegar.
Preparation Directions: Chop the leaves onto small, bite-sized pieces.
Cut the cherry tomatoes in half.
Chop the onions into bite-sized chunks.
Cut the cucumber up into small bite-sized pieces.
Mix the ingredients in a salad bowl.
Spritz lemon juice over the salad.
