HELEN WRIGHT’S SCRAMBLED EGGS
Ingredients
4 eggs 2 egg yolks
milk salt and pepper to taste
Instructions
Beat eggs and egg yolks together. Add the milk, salt and pepper and beat lightly.
Pour into buttered frying pan. Fry till your desired consistency.
BREAKFAST EGG / SAUSAGE CASSEROLE
Ingredients
6-8 slices white bread cubed 12-16 eggs
2 cups milk or half and half 1 teaspoon dry mustard
1/2 pound grated sharp cheddar cheese 1-1½ sausage meat
salt and pepper
Instructions
Line greased 9x13 pan with bread cubes. Cook sausage meat and remove grease.
Sprinkle sausage meat over cubes. Grate cheddar cheese and layer over sausage
meat. Combine eggs, half and half or milk, mustard, salt and pepper, in blender and
pour over ingredients. Let soak overnight in refrigerator with plastic wrap. When
ready to cook, preheat oven to 400 degrees and bake for 45 minutes.
