Instructions Continued:
Have a large bowl with cold water and a large pot with boiling water. Dip your hands
in the COLD water and then take a handful of the potato mixture and form into a ball
adding some croutons into the middle. Put potato ball on a large spoon and put into
boiling water. Continue with the rest of the potato mixture. They are done when they
float to the top.
* This recipe is made with raw potatoes not cooked mashed potatoes!
My mom and my Oma would always make these potato balls for a special dinner.
I remember my Oma making the potato balls with beef Roladen and serving it on the
fine Rosenthal china in the dining room with the white linen table cloth at her
apartment. For me the most special was my birthday celebration as I got older. My mom
would make me duck and potato balls. My husband Ron has continued the tradition of
making the potato balls and has taught our sons, Todd and Drew to make them.
HERTA HUBLER’S POTATO PANCAKE
Ingredients
5 pounds potatoes 3/4 chopped fine onion
1 egg salt to taste
3/4 cup flour
Instructions
Peel and grate potatoes and drain o excess water. Combine ingredients and drop by
spoonfulls in hot oil. Flatten with a spatula. When brown, turn pancake over once to
brown other side. Put on plate with paper towel to remove excess grease.
My mom would make this for dinner with chicken noodle soup on Friday nights.
Applesauce was always used to spread on the potato pancakes.
