LINDA MORAN’S ZUCCHINI PIE

Ingredients
3 cups sliced zucchini
1/4 teaspoon salt

1 small onion
4 large eggs
1 cup Bisquick
1/2 cup oil
1/2 cup grated Parmesan

Pepper to taste

Instructions
Combine all ingredients and put into a pie pan. Bake for 30 minutes at 350 degrees.
You can also add sliced mushrooms as well.

Linda Mazzola Moran is Ron Wright’s cousin. She would make this zucchini dish for
the birthday parties for her children, Lauren and Cristopher.

HERTA HUBLER’S RED CABBAGE

Ingredients
1/4 pound bacon 1 onion cut fine slices
1 red cabbage shredded 1/3 cup sugar

1 tablespoon brown sugar 1/2 cup vinegar
3 apples sliced and cut into pieces salt to taste

Instructions
Fry bacon and onion in a pot to sauté and crisp. Then add cabbage, mic and simmer
5 minutes. Add sugar, brown sugar, salt, vinegar and apples. Simmer over low heat
and add water is needed.

My mom, Herta Hubler always made red cabbage with goulash, roladen or duck. My
father, John Hubler liked to tease her and called it “perfume garbage”. My son, Drew
and husband, Ron love it too.
