LEMON ASPARAGUS

        Ingredients
        2 bunches thin asparagus (about 2 pounds) trimmed
        2 tablespoons loive oil
        1 tablespoon grated lemon zest
        pinch of salt and a dash of pepper
        1 tablespoon minced garlic


        Instructions
        Preheat oven to 450 degrees. Arrange asparagus in a pan, toss well with oil, lemon
        zest, salt, pepper, and garlic to coat. Spread out evenly and bake for about 15
        minutes.


        This recipe was given to us by Ann Grasso. Ann worked with Ron at Chestnut Hill
        School. She served us this dish at a lunch she had invited us to.

        PHYLLIS WRIGHT BAKED BEANS

        Ingredients
        1 package of dried Lima beans                                pinch of baking soda
        salt / pepper                                                a little ketchup
        chopped onion                                                salt pork
        1/4 cup water                                                maple syrup
        bacon strips



        Instructions
        Put dried Lima beans in cold water with a pinch of baking soda. Boil quickly, rinse
        and drain. Mix beans with salt, pepper and a little ketchup, onion, salt pork, 1/4 cup
        of water and some maple syrup then put in a large baking pan. Place baking strips
        on top and male sure there is enough water because the beans will absorb the water.
        You will have to keep adding water as necessary so the beans do not dry out. Bake
        at 350 degrees for 1 hour or until fork tender.


        When my Mother in Law, Phyllis Wright o ered to make a dish for a party, this is
        what she usually made.
