WHITE SAUCE

        Ingredients
        2 tablespoons butter                     1 tablespoon flour
        1 cup milk                               1/4 teaspoon salt



        Instructions
        Melt butter in sauce pan and with heat on very low, stir in flour and salt.
        Then slowly add milk whisking all the time. Continue cooking until mixture is
        smooth and at a boil. Remove from heat. Mix with a vegetable or fish. Serve hot.


        This is the white sauce we always used with the little pearl onions at Thanksgiving.






        ELSIE MOYER CHILI SAUCE

        Ingredients
        1 peck tomatoes                          3 peppers diced
        3 medium onions diced                    1 quart celery cut small
        1 pint vinegar                           1 tablespoon salt
        2 cups sugar                              1 pack mustard seed
        1 teaspoon ground clove                  2 teaspoon cinnamon



        Instructions
        Scald and skin tomatoes. Combine all the ingredients and boil for 2 to 2½ hours.





        HELEN WRIGHT’S BBQ SAUCE

        Ingredients
        1/2 cup ketchup
        2 tablespoons brown sugar

        1/4 cup maple syrup
        2 teaspoon Worcestershire sauce
        1 teaspoon lemon juice
        1 teaspoon lemon zest
        1 teaspoon water



        Instructions
        Mix together all the ingredients. Pour over beef, pork or poultry and cook,
        bake or BBQ
