                                                                                                                                              Preparation time: 5 minutes           1 large egg
                                                                                                                                              Cooking time: 15 minutes              ½ tsp baking powder
                                                                                                                                              Serves 4-6                            A pinch of salt
                                                                                                                                                                                    1 tbsp cooking oil
                                                                                                                                              You will need:                        Ice-cream (scoop for each pancake)
                                                                                                                                                                                    A drizzle of maple syrup
                                                                                                                                                ½ cup cake flour                    A handful of roasted nuts to decorate
                                                                                                                                                ½ cup milk



                                                                                                                                                                            Method
                                                                                                                                          1 Blend the flour, milk, egg, baking powder and salt to make the pancake batter.

                                                                                                                                          2 Heat a non-stick pan or a slightly oiled pan on medium heat. Pour 2 tbsp of the pancake batter and
                                                                                                                                          add about 1 tsp oil around the perimeter of the pancake.

                                                                                                                                          3 Turn the pancake to cook the other side. Add a little more oil turning again until the pancake is
                                                                                                                                          cooked to a golden brown colour.

                                                                                                                                          4 Just before serving, place a scoop of ice cream on one side of the pancake and roll so that the ice
                                                                                                                                          cream is sandwiched.

                                                                                                                                          5 Drizzle over some maple syrup and sprinkle nuts to decorate. Serve
