 Apple pie







 SERVED STEAMING HOT, THIS IS THE PERFECT PICK-ME-UP ON A COLD NIGHT


 Preparation time: 15 minutes   For the pastry:
 Cooking time: 45 minutes
 Serves 8  2 cups cake flour
 1 tsp baking powder
 You will need:  1 cup sugar
 115g + 50g margarine
 8 apples small  2 egg yolks
 ½ cup water  1 egg whole
 ¼ cup sugar  1 tbsp sugar
 2 slices of lemon  A sprinkle of chopped almonds
 1 tsp cinnamon powder  or pecan nuts



 Method

 1 Peel and slice the apples. Boil them in water with the sugar and lemon slices. Cook for 10 minutes.

 2 Add the cinnamon and cook for a further 2 minutes. Alternatively, use tinned apple or any other
 tinned fruit filling. Just add the cinnamon to your chosen fruit and use as a filling.

 3 To make the pastry, combine all the ingredients except margarine, sugar and nuts, and knead gently.
 When the dough is kneaded to a soft consistency, put 1 cup pastry aside in the fridge to harden. Now,
 using your hands, layer the rest of it in a medium pie dish. The dough will be fairly soft so gently press it   Chef’s tip
 down onto the dish. Spread the apple filling on the pastry. Add the 50g margarine on top of the filling.
 Grate the pastry, which you have put aside in the fridge, over the apple filling.   Always prepare more apples

 4 Sprinkle over the sugar and nuts and bake for 45 minutes at 190°C/375°F/Gas Mark 5.   will find that the mountain of
                                                                                  apples will deflate as you bake.
 5 Serve hot with custard or cream.
