Peach Melba With Ice Cream Cont'd
Directions:
Blend all ingredients (except for the peaches) and strain through a fine sieve. Keep aside to cool or place in fridge. 20 minutes to thicken.
Boil 2 cups of water Add 1/2 cup jaggery
Add peach halves face down in boiling water and cook for a few minutes then turn peaches over and cook a further 2 minutes.
Remove from the water and gently peel off the skin. Allow to cool to room temperature. Place peach halves face down, rounded part on top.
Pour raspberry, watermelon puree over the peaches. Serve with scoop of strawberry and hibiscus coconut ice- cream or one of your choice.
