For those who consider themselves a connoisseur of good food, then this article is sure to get their attention. One young lady who now calls Tampa home has a sur- prise in store for Tampa and for the state for that matter.
She plans to take food to the next level when she launches her business on Sat- urday, July 1st. Mrs. Jas- mina Maddox Clay added words such as “pickles and peppers,” “Dallas flavor,” and “special sauce” to the conver- sation when talking about Chick’s Chicken.
The business will be lo- cated at the corner of N. 56th Street and E. Hillsborough Avenue in a trailer on the Kane’s Furniture property. It will be open from 9:30 a.m. until 5:30 p.m., Monday through Friday.
“It’s home-fried chicken. It tastes like home and you’re not going to find it anywhere else. My special sauce is something you won’t forget,” she said with confidence. The business will also sell shrimp, fish, and sandwiches.
She also said she adds two other ingredients to make her food unforgettable --- God and love.
Mrs. Maddox Clay said she was very close to her grandfather, the late Roger Maddox, a restaurant owner in Charlotte, North Carolina. “Losing my grandfather was like losing my best friend. But he loved cooking and he taught me the recipe,” she said.
Having lived in other states, when Mrs. Maddox Clay, 25, decided to step into the business arena, she had a formula. “My balance is my husband, Javarius, who is supporting me in this en- deavor. But, God got me

started. He laid it on my heart to do something that I love. My husband and I cre- ated a vision board and prayed over it. Then every- thing just started moving fast. It has been a steady process since the end of last year.”
Mrs. Maddox Clay said she is unsure if her hours of operation will change. “I have to make time for God and church. I need personal time for my husband and kids.
“I’m not worrying about the extra dollars you could make if it takes you away from God because He will make a way for me,” she said.
After graduating from high school, she enrolled at Re- gency Beauty School in Char- lotte. Following graduation, Mrs. Maddox Clay moved back to Tampa.
A member of Victorious Life Church Of God, Mrs. Maddox Clay is the mother of two children.
