                                                              The primary benefit of Tara gum is that it creates a so  gel texture when
                                                              combined with Xanthan Gum or Carrageenan. It also improves gel elas ci-
                                                              ty and water reten on in gels. In addi on, Tara gum improves freeze-thaw
                                                              stability by inhibi ng ice crystal forma on. Tara gum has superior emulsion
                                                              stability, improved odor and taste over guar gum, excellent flavor release,
                                                              and stability under acidic condi ons. Unlike Locust Bean Gum and Guar
                                                              Gum, Tara Gum can solubilize in cold (par al hydra on) or hot (total hy-
                                                              dra on) solu ons. It is Kosher cer fied.
