 Hawaiian Haystacks
Makes 4 Servings

Celery, Diced
Carrot, Shredded
Pineapple, Fresh or Canned Tomato, Diced
Green Onion, Finely Chopped Avocado, Diced
Cheddar Cheese, Shredded Chow Mein Noodles

2 In another medium sized saucepan on medium heat, melt the butter. Add the
onion and garlic and sauté for 2-3 minutes, stirring with a whisk occasionally.
3 Add the  our and whisk continuously so the  our doesn’t burn. Cook for 2 minutes to cook out the  our taste. Add the chicken stock and milk and bring to a simmer.
4 Add the chicken, salt and pepper and stir until creamy and well combined.
5 Prepare all of the toppings.
6 To plate, top your desired amount of rice with the chicken mixture and top with the toppings of your choice.
   Ingredients
2 Cups White Rice, Cooked
3 Tablespoons Unsalted Butter
1/4 Cup White Onion, Diced 1/4 ‘‘
1 Garlic Clove, Minced
3 Tablespoons All Purpose Flour
2 Cups Chicken Stock
1/2 Cup Milk
1 1/2 Cup Cooked Rotisserie Chicken
(shredded or diced) 1/2 Teaspoon Kosher Salt 1/4 Teaspoon Black Pepper
Directions
   Cook rice to package directions.
