the cheese. Place the asparagus, head to tail, on top of the herbs,
                and  add  the  remaining  cheese.  Pour  in  the  egg  mixture.  Slide  the

                pan into the oven (on top of the steel, stone, or baking sheet if using)
                and bake until the custard is set, 25 to 30 minutes.
                    Cool for a moment before slicing and serving warm.

                  Single-crust All-Butter (here), Butter and Shortening (here), and

                  Rye Crusts (here) are all delicious.

                  With a rye crust, add a dab of Dijon mustard to the custard.
