Graham Crackers
I have many happy food memor ies that include g raham crackers:
soaked in a warm bowl of milk with a pat of butter for breakfast;
nibbled post-nap in nurser y school; and paired with toasted
marshmallows, chocol ate bars, and a roar ing campre.
Th e or ig inal g raham cr acker was developed by an evangelical
minister, Sylvester Graham , who cr usaded for a diet of whole
g rains. Graham hoped that his bland cracker would r id Amer icans
of the single g reatest health haza rd facing them : sexual desire. I
ca n promise that these g raham crackers are delicious, far from
bland, and that they don’t pose—or threaten—any “health
haza rds.”
MAKES THIRT Y 2-INCH COOKIES
2 cups all-purpose flour
½ cup gr aham or whole wheat flour
½ cup ligh tly packed ligh t brown sugar
2 tablespoons rolled oats, pulverized in a coffee grinder
1 teaspoon baking soda
½ teaspoon gr ound cinnamon
½ teaspoon fine sea salt
½ cup (1 stick) unsalted butter, chilled, cut in small pieces
⅓ cup mild honey
6 tablespoons whole milk
1 tablespoon vanilla extract
