R olled cookies come in various shapes and sizes, and degrees of
difficulty. The catego ry includes decorated cookies, simple
suga r cookies, and shortbread. In order to make rolling and cutting
painless, most rolled cookie doughs are stiff and minimally sticky.
To avoid introducing extra flour into a recipe for rolled cookies, roll
the dough on a surface lightly dusted with white rice flour or
confectioners’ suga r, or between sheets of plastic wrap or
parchment paper.
