Ginger–Lemon Cream Sandwiches
Golden syr up is what sets these cookies apar t from g ingersnaps,
which are made with molasses. Th e subtle, mild avor of the syr up
lets the g inger shine through , so make sure your g round g inger is
super fresh . L yle’s is the brand of golden syr up most often available
in the United St ates. It ca n be found in specialty and gourmet
stores and well-stocked g roce r ies.
MAKES EI GHTEEN TO TWEN T Y 1½-INCH COOKIES
1¾ cups all-purpose flour
1 tablespoon freshly gr ound ginger
1 teaspoon baking soda
⅛ teaspoon fine sea salt
½ (1 stick) cup unsalted butter
½ cup suga r
⅓ cup go lden syrup (such as Lyle’s)
FOR THE FILLING:
3 tablespoons unsalted butter
2 tablespoons go lden syrup (such as Lyle’s)
1 tablespoon freshly squeezed lemon juice
1½ cups confectioners’ suga r
1½ teaspoons finely gr ated lemon zest
⅛ teaspoon fine sea salt
