5.  Bake  for  6  to  8  minutes,  rot ating  the  sheets  half way  through,

                or  until  the  cookies  puff  up  and  are  rm  in  the  middle  but  show
                no  color.  Move  the  sheets  from  the  oven  (leaving  the  cookies  on
                the sheets) to a wire rack to cool completely.



                6.  When  the  cookies  are  completely  cool,  sandwich  them  with  a
                ½ t ablespoon of lling. Refrigerate until rm, about 10 minutes,
                then    let   the   cookies     sit   at   room   temperature        for   30   minutes
                before ser ving.
