5. Bake for 6 to 8 minutes, rot ating the sheets half way through,
or until the cookies puff up and are rm in the middle but show
no color. Move the sheets from the oven (leaving the cookies on
the sheets) to a wire rack to cool completely.
6. When the cookies are completely cool, sandwich them with a
½ t ablespoon of lling. Refrigerate until rm, about 10 minutes,
then let the cookies sit at room temperature for 30 minutes
before ser ving.
