                   pour the liqu id over the chocolate. Place a lid or plastic w rap

                   over  the  bowl  and  let  sit  for  5  minutes.  Remove  the  lid  and
                   slowly     begin     to   whisk     the   mixture,      st arting     with    small
                   circles    in   the   middle    and   working      your    way    outward      until

                   you  have  a  smooth,  glossy  lling.  Fold  in  1  cup  nely  diced
                   dried     apricot s      and    leave    at   room     temperature,        stirring
                   occasionally,        until     the     lling     becomes         a   spreadable
                   consistenc y, about 30 minutes.
                      Sandwich        the   ganache      between      the   brow nie      layers    and

                   chill briey before cutting.
