B ar cookies are a different animal. More substantial than a
cookie, the dough is usually baked in a square or rectangular
pan and cut into smaller pieces when cool. For most, brownies are
the quintessential bar cookie, but there’s no end to the flavors and
combinations. Making and baking goes more quickly than cookies,
since there’s no chilling or time spent shaping and arranging the
dough on baking sheets. And don’t let the fact that they’re baked in
a square pan and called “bars” limit you. Triangles, fingers (long
rectangl es), and wedge s can all be cut from a square.
