BaltimOregon Sugar Cookies




                Si lber ’s   Baker y    in   Baltimore     set   a   high   bar   for   sugar    cookies.
                Famous  for  their  Berger  cook ies—a  cake-like  disk  thickly  iced  with
                fudge    frosting—the       baker y    (now    closed)   also   made     cr isp,   butter y
                sugar  cook ies  sce nted  with  lemon  ze st  and  vanilla.  Th e  memor y  of

                those    cook ies,   and   the   way    the   baker y   smelled,    led   me   on   a   long
                journey  to  cr eate  this  reci pe.  Wh o  knows  if  these  cookies  actually
                resemble      those   per fect    sugar   cookies    of   my   youth ,   but   they   taste
                exactly like I think a sugar co okie should.








                                            MAKES  ABOUT 3 DOZEN  COOKIES






                2¼ cups all-purpose flour

                ½ teaspoon fine sea salt

                ¾ cup (1½ sticks) unsalted butter, room temperature
                1½ cups suga r, plus more for sprinkling

                1 egg
                1 teaspoon vanilla extract

                1 tablespoon finely chopped lemon zest

                White rice flour, for rolling



                1.  In  a  small  bowl,  whisk  together  the  all-purpose  our  and  salt.
                Set aside.
