                Like     thumbpr int        cook ies,     linze r   cookies      (and     tar ts)   never
                disappoint,  no  matter  what  combination  of  nuts  and  preser ves  you
                use. But for Valentine’s Day, it’s got to be hear t-shaped sandwiches
                with    raspberr y     middles.     You’ll   need    two   hear t   cookie    cutters—a

                large  one,  about  two  inches  long,  for  the  bottoms  and  a  smaller  one
                to   stamp     out   the   middles      of   the   tops.   Don’t   feel   limited    by   a
                par ticu lar   shape     or   holiday.   Th ese   cookies    are   beautiful     in   ever y
                cong uration ,       and     taste    pretty    darn     good     before     and    after

                Febr uar y 14 if you share them with someone you love.







                                            MAKES  ABOUT 3 DOZEN  COOKIES






                2 scant cups toasted almonds

                1 cup confectioners’ suga r, divided, plus more for dusting

                2 cups all-purpose flour
                1 cup white rice flour, plus more for rolling

                ½ teaspoon gr ound cinnamon

                ½ teaspoon fine sea salt
                ¼ teaspoon freshly gr ound nutmeg

                1½ cups (3 sticks) unsalted butter, room temperature

                1 egg
                ½ teaspoon vanilla extract

                1 cup raspberry jam or preserves
