C    ookies    are   beloved      through out      the   year,   but   making,     giving,

                     and  eating     cookies  during       the  holidays  evokes  the  essence  of

                childhood       for   many    of   us.   When    I   was   young,    my    father   made
                biscotti    each    year   for   Christmas.     They    were    just   like   the   biscotti

                you’d find in an old-school Italian bakery in Brooklyn: crunchy with

                a  fine  crumb  and  plenty  of  anise  flavor.  Hi s  holiday  version  called
                for  dividing    the  dough   in  three,  and  incorporating  red  and  green

                food coloring  into two of the pieces. When they combined to form

                a   log,    each   slice   had   a   bit   of   festive   color.   We   laugh   about   that
                now,     and    wonder       how    they    tasted.    It’s   not   really   about     that

                though ; it’s about how these special cookies make us feel.
