Rugelach




                Th is   r ugelach     dough ,    like   most,    contains     cream     cheese,     which
                makes     it   ver y   tender.   Using   a   food   processor    to   make    the   dough
                rather  than  a  mi xer  cr eates  a  akier  dough .  Or  you  can  make  the
                dough by hand; it’s not unlike making pie dough.








                                                MAKES  4 DOZEN  COOKIES






                2 cups all-purpose flour

                2 tablespoons suga r
                ½ teaspoon fine sea salt

                1 cup (2 sticks) chilled unsalted butter, cut in small pieces

                8 ounces chilled cream cheese, cut in small pieces
                1 teaspoon vanilla extract

                White rice flour or confectioners’ sugar, for rolling


                FOR THE FILLING:
                ¾ cup coarsely chopped, toasted walnuts

                ¼ cup gr anulated suga r
                ¼ cup ligh tly packed ligh t brown sugar

                ½ teaspoon gr ound cinnamon

                ¼ teaspoon freshly gr ated nutmeg
                ½ cup go lden raisins

                ¼ cup currants

                ¾ cup fine cut orange  marmalade
