minutes on the baking sheets before transferring the cookies to
a wire rack to cool completely.
WITH A TWIST
Orange Marmalade–Choc ol ate Rugelach: Use the following
lling in place of the original. Stir together 2 tablespoon s
unsweetened coc oa powder, 6 ou nces nely shaved
bittersweet choc ol ate, and ½ cup granulated sugar. Add
¾ cup coa rsely, chop ped toa sted hazelnuts instead of the
raisins and currants, if desired.
Fig-Anise Rugelach: When making the lling, reduce the
sugars to 2 t ablespoons each, and substitute 1½ teaspoon s
cr ushed aniseed for the cinnamon and nutmeg. Substitute
1 cup nely chop ped gs for the raisins and currants, and
add ½ cup coa rsely chop ped, toa sted almon ds, if desired.
