CH ILLING THE DOUGH
Recipes tha t specify chi lling the dough a certain length of time do so for
good reason. Tha t time in the refrigerator ma y be needed for the dry
ing redient s to absorb the liquid ingredients, which will produce a chewier
cookie, and /or allow the flavors to develop, as with ginger cookies.
