Coconut-Lime Washboards
Th is is another reci pe from my g randmother ’s le. Like many
cook ie reci pes from that time, it calls for shor tening, an ing redient
I’d normally replace with butter. In this case, however, coconut oil
seemed like a natural substitute, not to mention better tasting and
better for you! I’ve added the ze st of two limes and changed a
cou ple of other ing redients, but kept the namesake washboard
impr int, cr eated with the tines of a fork.
MAKES ABOUT THIRT Y COOKIES
2 cups all-purpose flour
¾ teaspoon baking powder
¼ teaspoon fine sea salt
2 tablespoons buttermilk
½ teaspoon baking soda
½ cup coconut oil, room temperature
1 cup ligh tly packed ligh t brown sugar
1 egg
½ teaspoon vanilla extract
1 cup unsweetened dried coconut (fine-cut), divided
1 tablespoon finely chopped lime zest
