Cook ie dough tend s to freeze well, which me ans you should always ma ke
mor e than you plan to bake at one time . Most dough will keep in the
refrigerator for 3 days , or you can store it in the freezer for up to 3 months
and pull it out whe n the mood hi ts. Just stash a few logs of cookie dough
behi nd the ice cream and frozen peas. For busy bakers and cookie lovers
alike, sliced cookies are ind ispensable and a ready source of sweet
satisfaction
The great appeal of sliced cookies is that they are perfect for those
occasions whe n you want just a few cookies (stick with me if you’re having
trouble picturing you rself in such a situation), or if you want the security of
know ing the re’s an ent ire pan of cookies in your freezer, just waiting to be
sliced and baked to order.
For sliced cookie success, allow the frozen log to sit at room
temp erature for 20 to 30 mi nu tes before slicing. Gently roll the log back
and forth on a flat surface, using your palms and fi gers to restore its
smoot h, cyl ind rical sha pe if ne cessary. To give the cookies a decorated
edge, brush the outside of the log with egg wash (see not e) and roll it in
nu ts, seeds, or coarse sugar. Slice with a sharp or serrated knife, bake, and
serve fresh cookies to you r last-minute guests with a nonchalant smi le.
