PEACH COBBLER CUPCAKES

               In truth, my husband is a pie man. He’d rather have a home-baked apple,
               blackberry, or peach pie than a slice of chocolate cake. However, for years I’d
               been serving up cakes that I had created for my books. So, when I brought out
               these mini peach pies masquerading as “cupcakes,” John thought he had come
               home to the wrong house. Forking into sweet fruit and hot pastry, he was one
               happy guy.






























                     MAKES 8 CUPCAKES (21/2 INCHES EACH)
                     PREPARATION TIME: 25 MINUTES

                     BAKING TIME: 16 TO 18 MINUTES




               1 package (15 ounces) refrigerated pie crusts (2 crusts to a package)
               All-purpose flour for dusting a work surface

               1 package (16 ounces) frozen sliced peaches, thawed, or 2 heaping cups sliced
                    fresh peaches, well drained
               2 tablespoons water, if using frozen peaches
