BREAD PUDDING “CUPCAKES”

               Bread pudding is, I believe, one of the most tempting desserts around. But each
               time I order it at a restaurant, I eat two bites and wonder, “How did I ever think I
               could eat the whole thing?” This hearty dessert, rich with custard, is often too
               filling after a big meal, especially in those hefty restaurant portions. Here is a
               lighter alternative. Just as delicious, it is baked in cupcake cups so that each
               serving is just that—one serving—and a very satisfying one it is. Omit the
               brandy if you wish and add ⅓ cup more milk.































                     MAKES 8 CUPCAKES (2½ INCHES EACH)
                     PREPARATION TIME: 15 MINUTES

                     BAKING TIME: 20 TO 25 MINUTES




               1 teaspoon butter, at room temperature

               ⅓ cup brandy

               ¼ cup dried currants
