instead of finding substitutions. There really is no good substitute
for the neutral, sweet flavor of corn syrup. However, if you find
yourself desperate to maintain a diet of whole foods, honey or
maple syrup simulates the texture of corn syrup (light and dark
respectively), though they can’t reproduce its flavor. This is a
dessert cookbook, after all. No one ever got skinny off a piece of
pie, but they did enjoy themselves while eating it. In this case, I
repeat the golden rule immortalized by Julia Child and others:
everything in moderation!
