1 To make the salsa, place an iron skillet over high heat. When pan
is very hot, add peppers, blackening for 6 minutes on each side,
pressing down on the pieces occasionally to produce an even char.
2 Remove peppers from skillet and allow to cool. Dice and add to a
medium bowl with all remaining salsa ingredients. Stir and cover.
Allow to marinate for 1 hour.
3 To make the chips, begin by preheating oven to 350°F. Cut 2

spiders from each tortilla. Place spiders on 2 ungreased baking
sheets. Lightly brush both sides with olive oil and sprinkle with
kosher salt (there will most likely be oil and salt left over). Bake for
10 to 12 minutes, swapping and rotating the pans halfway through.
Transfer to a wire rack to cool.
Serve to a sinister count in the dark dining hall of a decrepit Transylvanian castle!
* Blue corn tortillas can be difficult to find at standard chain
grocery stores but are carried at most international markets and
Hispanic grocery stores.
** To avoid waste, you can oil, salt, and bake the tortilla scraps
into irregular chips for snacking. You can also cut them into thin
strips just before baking to add to salads.
