on a cutting board, place the cookie cutter on top, and gently
strike it with the flat side of a meat mallet. If using this technique,
be sure to hit the cutter squarely, not at an angle, otherwise it
can bend the cutter. As such, it’s best to only use this technique
with cutters that are no larger than the striking side of the mallet.
The leftover vegetable scraps can be seasoned with olive oil,
salt, pepper, and the leftover rosemary, then roasted and served
with the cheese scraps as a snack, a side dish, or warm winter
salad components.
