Makes 1 (14-inch) tart
“In the very middle of the court was a table, with a large dish of tarts upon it: they looked so
good, that it made Alice quite hungry to look at them—‘I wish they’d get the trial done,’ she
thought, ‘and hand round the refreshments!’”
Real-life re-creations of the Queen of Hearts’s tarts are almost always sweet, so I decided
to make a savory version with tomato and cheese filling. I highly recommend splurging for
the cherry tomatoes on the vine; they create a striking visual effect and are much sweeter
than those that have been plucked from the vine before packaging.
INGREDIENTS
For the Crust
1½ cups flour
¾ teaspoon salt
15 medium fresh basil leaves
7 tablespoons cold butter, cut into cubes
For the Filling
12 ounces crumbled goat cheese
1 cup ricotta
1 egg
3 cloves garlic, minced
¼ cup snipped green onion
1 teaspoon salt
¼ teaspoon pepper
12 ounces cherry tomatoes on the vine
Olive oil
