Makes 10 ice cream “cupcakes”



                 “Higher and higher still they flew, nearer and nearer to the stars, when suddenly the mirror
                  shook so terribly with grinning, that it flew out of their hands and fell to the earth, where it
                                     was dashed in a hundred million and more pieces.”



                This tasty reference to the fateful mirror from “The Snow Queen” features a no-bake
                shortbread crust, amaretto vanilla ice cream filling, and candy mirror pieces. A frosty treat
                sure to melt any frozen heart!


                INGREDIENTS

                 1 cup shortbread cookie crumbs
                 2½ tablespoons crushed almonds

                 2 tablespoons unsalted butter, melted

                 2½ cups vanilla bean ice cream
                 2½ tablespoons amaretto

                 10 Jolly Ranchers, blue

                 8 ounces frozen whipped topping, thawed


                INSTRUCTIONS


                1 Fill a cupcake pan with cupcake liners and set aside. In a medium
                bowl, whisk together cookie crumbs, crushed almonds, and melted

                butter with a fork until well combined.

                2 Spoon 2 tablespoons cookie crumb mix into each liner and firmly

                press flat. Freeze for 30 minutes.

                3 In a medium bowl, beat together ice cream and amaretto with a

                hand mixer on medium speed until smooth. Divide ice cream evenly

                between cupcake liners (approximately ¼ cup per liner). Freeze for 1
                hour.


                4 Preheat oven to 350°F. Line a baking sheet with parchment paper
                and space Jolly Ranchers ½ inch apart on the parchment paper.
