Pumpkin Syrup
Makes 2¼ cups
INGREDIENTS
7.5 ounces pumpkin puree
2 cups water
½ cup brown sugar, packed
½ cup granulated sugar
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon cloves
¼ teaspoon ginger
Special Tools
Wire-mesh strainer
INSTRUCTIONS
1 Combine all ingredients in a medium saucepan over medium-high
heat and whisk until smooth. Bring to boiling. Reduce heat to
medium-low and simmer for 10 minutes, whisking regularly.
2 Pass mixture through a wire-mesh strainer 3 times, discarding the
deposits in the strainer between straining. Transfer liquid to a
sealable container. Cover and chill in the refrigerator until ready to
use. *
