Basil Pesto




                                                    Makes ½ cup


                INGREDIENTS

                 1 cup fresh basil, loosely packed

                 ½ cup grated Parmesan cheese
                 ¼ cup pine nuts, toasted (to toast, place on a baking sheet in a

                     325°F oven for 3–5 minutes.)
                 2 small cloves garlic, minced

                 1 teaspoon lemon juice

                 ¼ teaspoon salt
                 ¼ teaspoon pepper

                 6 tablespoons olive oil


                INSTRUCTIONS


                1 Add all the ingredients except the olive oil to a food processor and

                process on low until the mixture is well combined and has a grainy
                consistency. Gradually add in the olive oil and process until

                combined.
