3 For Floral Honey: To the mason jar add 1 teaspoon vanilla extract
and 2 tablespoons food-grade lavender buds. Pour honey into jar
and seal tightly. Let sit for 1 week, periodically turning over the jar.
Taste with a clean spoon after 1 week. If desired flavor level has
been reached, scoop out lavender with a slotted spoon and discard.
If not, continue to taste every 2 to 3 days.
• Uses: Baking, beverage sweetener
4 For Spiced Honey: To the mason jar add 2 cinnamon sticks, 2
star anise seedpods, and ¼ teaspoon whole cloves. Pour honey into
jar. Make sure contents are completely submerged and lightly tap jar
on counter to dispel air bubbles. Seal tightly. Let sit for 1 week,
periodically turning over the jar. Taste with a clean spoon after 1
week. If desired flavor level has been reached, remove and discard
add-ins. If not, continue to taste every 2 to 3 days.

condiment, oatmeal/pancake/waffle topper, cocktails, poultry
glaze
5 For Lemon-Ginger-Mint Honey: To the mason jar add 1.5 ounces
fresh ginger (peeled), 2 1” x 2” strips lemon peel, and 1 large sprig
fresh mint. Pour honey into jar. Make sure contents are completely
submerged and lightly tap jar on counter to dispel air bubbles. Seal
tightly. Let sit for 1 week, periodically turning over the jar. Taste with
a clean spoon after 1 week. If desired flavor level has been reached,
remove and discard add-ins. If not, continue to taste every 2 to 3
days.
