Infused Honey




                                            Makes 6 ounces honey




                More than just a sweetener, honey adds complexity to everything, from cocktails to glazes
                for poultry or fish. It also makes a wonderful condiment for bread or drizzling over cheese.
                Increase your honey’s versatility by infusing it with fun flavors like lavender, cinnamon, and
                even bourbon! More uses are included in the instructions below.


                INGREDIENTS

                 6 ounces honey


                Special Tools

                 1 (8-oz.) mason jar and lid, sterilized


                INSTRUCTIONS


                1 For Bourbon Honey: Stir 2 tablespoons bourbon into honey until

                well combined. Pour into mason jar and seal.
                     •    Uses: Baking, bread and cheese condiment, cocktails, poultry

                          glaze

                2 For Garlic and Herb Honey: To the mason jar add 1 large sprig

                fresh rosemary, 1 large sprig fresh thyme, and 3 cloves peeled

                garlic. Pour honey into jar. Make sure contents are completely
                submerged and tap jar lightly on the counter to dispel air bubbles.

                Seal tightly. Let sit for 1 week, periodically turning over the jar. Taste
                with a clean spoon after 1 week. If desired flavor level has been

                reached, remove and discard add-ins. If not, continue to taste every

                2 to 3 days.
                     •    Uses: Bread and cheese condiment, fish and poultry glaze,

                          roasted vegetable glaze
