Honeycomb Candy
Makes 10 ounces
This unique, fragrant candy tastes great on its own and can also be crumbled and used as a
garnish atop Pooh’s Honey Lemon Cookies on page 127.
INGREDIENTS
¾ cup granulated sugar
½ cup honey
¼ cup corn syrup
½ teaspoon almond or vanilla extract
⅛ teaspoon salt
1 teaspoon baking soda

Candy thermometer
INSTRUCTIONS
1 Line a 9” x 13” baking dish with parchment paper, making sure the
edges of the paper extend at least 2 inches above the pan. Set
aside.
2 Add the granulated sugar to the center of a medium saucepan.
Pour the honey, corn syrup, extract, and salt over the sugar. Place
over medium heat and bring to 300°F (do not stir). Remove from
heat and add the baking soda all at once, whisking until well
combined. *
