Homemade Marshmallows
Makes 1 (8” x 8”) pan
Homemade marshmallows are worlds better than store bought and easy to customize. Plain
vanilla marshmallows cut into squares are an elegant gift, but it’s also fun to play with
flavors and cookie cutters. Check the note in the margin for instructions for gingerbread and
mint versions of this recipe!
INGREDIENTS
¼ cup plus 2 tablespoons cold water
1½ tablespoons gelatin powder or 2 (0.25-oz.) packets
¼ cup room- temperature water
¼ cup plus 2 tablespoons corn syrup
¾ cup sugar
Pinch salt
1½ teaspoon vanilla extract
¼ cup cornstarch
¼ cup powdered sugar

INSTRUCTIONS
1 Line an 8” x 8” baking pan with aluminum foil. Spray the foil with
cooking spray and set aside.
2 Add ¼ cup and 2 tablespoons of cold water to the bowl of a
standing mixer. Sprinkle in gelatin and stir gently to combine. Allow
to bloom for 10 minutes.
