3 Carefully pour the mixture into the prepared pan. If the parchment

                paper is not sitting firmly in the bottom of the pan, the mixture should
                weigh it down.


                4 Allow to rest for 45 minutes until hard and completely cool.


                5 Strike with a spoon to break into small pieces. Store in a sealed
                plastic bag.




                   *  The baking soda causes a chemical reaction, making the hot

                   sugar mix foam upward very quickly. Always use caution when
                   working with hot sugar.
