Makes 15 potatoes
“The potatoes are on boiling and the kettle’s singing and I daresay, Mr. Beaver, you’ll get us
some fish.” —Mrs. Beaver, The Lion, the Witch, and the Wardrobe
These salty, savory mashed-then-roasted potatoes are sure to disappear even more quickly
at your Christmas gathering than they did when Mrs. Beaver fed them to the hungry
Pevensies.
INGREDIENTS
15 baby Yukon Gold potatoes
½ teaspoon kosher salt, divided
¼ cup butter
½ tablespoon lemon juice
¼ teaspoon fresh ground black pepper
1–2 teaspoons snipped fresh chives
INSTRUCTIONS
1 Preheat oven to 425°F. Grease two baking sheets and set aside.
2 Add potatoes to a large pot and fill with cold water until
approximately 1 inch above the top of the potatoes. Add ¼ teaspoon
kosher salt and bring to a boil over medium-high heat. Boil for 10 to
15 minutes until potatoes are fork-tender. Drain and transfer
potatoes to the baking sheets, placing the potatoes evenly apart.
3 Smash potatoes with a potato masher or the bottom of a heavy
glass. Melt the butter and stir in lemon juice until combined.
Generously brush potatoes with melted butter mix. Sprinkle on
pepper and remaining salt.
4 Bake 15 to 20 minutes or until edges are golden brown and
beginning to crisp. Sprinkle with chives.
