and could overflow if allowed to continue). Simmer for 10 minutes
without stirring.
2 Remove from heat. Quickly stir in the lemon juice, extract, and
food coloring. Be careful, as the sugar mix is very hot and will foam
upward slightly.
3 Quickly pour the mix into the prepared pan and chill in the
refrigerator for 4 to 6 hours.
4 Whisk the powdered sugar and cornstarch in a medium bowl.
Sprinkle a generous layer of the sugar-cornstarch mix onto a cutting
board. Loosen the candy mix from the edges of the pan with a sharp
knife coated with cooking spray. Overturn the candy onto the cutting
board (you may need to ease it up from the bottom of the pan with
the knife before overturning). Cut the mixture into squares
approximately 1 inch across, respraying the knife if it starts to stick.
Very gently toss the pieces in the powdered sugar mix to coat.
5 These can be eaten right away. The pieces can also be allowed to
set overnight on a shallow bed of the sugar-cornstarch mix in a
large, lightly covered dish with tall sides (like a glass baking dish).
Overnight setting will achieve a slightly more stable consistency.
