Makes 2 roulades

Turkey roulade is an elegant alternative to the traditional roasted holiday turkey. Feel free to
experiment with your favorite dried fruits and nuts for the filling to make it your own!
INGREDIENTS
For the Glaze
¾ cup cranberry juice
2 tablespoons brown sugar, packed
1 teaspoon lemon juice
¼ teaspoon thyme
¼ teaspoon rosemary
¼ teaspoon salt
Pinch black pepper
For the Roulades
2 boneless frozen (1-lb.) turkey breasts, thawed
1 heaping cup Bartlett pears, cubed
1 cup high-quality white bread, cubed
¼ cup dried cranberries
¼ cup chopped walnuts, toasted
¼ cup yellow onion, finely chopped
½ teaspoon rosemary
¼ teaspoon thyme
¼ teaspoon salt
⅛ teaspoon pepper
¼ cup chicken broth
2 tablespoons melted butter
