Makes 12 muffins
“Henry did not reply, but munched on in silence, until, the meal finished, he topped it with a
final cup of coffee. He wiped his mouth with the back of his hand. . . . A long wailing cry,
fiercely sad, from somewhere in the darkness, had interrupted him.”
These muffins taste delicious with maple butter. To make your own maple butter, simply mix
a few tablespoons of maple syrup into a stick of softened butter until smooth.
INGREDIENTS
½ cup unsalted butter
2 teaspoons instant coffee granules
1 cup milk
2 cups flour
½ cup granulated sugar
¼ cup brown sugar, packed
2 teaspoons baking powder
¼ teaspoon each cinnamon, ginger, and nutmeg
½ teaspoon salt
2 tablespoons maple syrup
1 egg
1 teaspoon vanilla extract
INSTRUCTIONS
1 Preheat oven to 375°F. Melt the butter in a microwave and set
aside to cool. Stir the instant coffee granules into the milk and allow
to dissolve. Fill a muffin pan with liners and set aside.
2 In a large bowl, whisk together the flour, sugars, baking powder,
spices, and salt. Whisk in the maple syrup, egg, vanilla, melted
butter, and milk mix (stir the milk thoroughly before pouring it in).
