 CAMPERVAN COOK BOOK

Baked in vast quantities for the Porthcawl camp to feed 40 people, read all about the camp in the events section of this issue).
Bara Brith is a Welsh Fruit Tea cake. This is a recipe that was handed down from my Mother and has proven to be very popular over the years. This is very easy to make, the hardest bit is to allow the dried fruit to soak in the tea and to allow the cake to mature for a few days after baking.
(Editor – the hardest part is not scoffing the lot before anyone comes to visit!)
INGREDIENTS
‹ 300mls of strong black tea made with three tea bags
‹ 50 grams of currants
‹ 400 grams of dried mixed fruit
‹ 100grams of dark muscovado sugar
‹ 2 teaspoons of ground mixed spice
‹ 1 teaspoon of ground cinnamon
‹ 2 large eggs
‹ 250 grams of self-raising flour ‹ 1⁄2 teaspoon of salt
‹ Salted butter to serve
