 METHOD
Add three tea bags to 300 ml of boiling water, leave to brew for 5 minutes
Put the currants, mixed fruit , Sugar and spices in a bowl, add the hot tea, mix it well, cover and leave overnight.
The next day heat the oven to 180oC/160oC/ 350ofan.
Line a 900g /2lb loaf tin with greaseproof paper.
Add the flour and salt to the fruit mixture and mix until the flour is mixed in.
Beat the egg in a small cup, add to the mixture, you may need a small amount of milk if it is not a dropping consistency.
Put the mixture in a loaf tin and smooth the top.
Cook for 40/50 minutes until the top is a nice golden colour and a skewer poked into the cake comes out clean.
Leave in the tin to cool then remove from the tin and wrap in kitchen foil and put in an airtight container for two days.
To serve, slice and butter generously. There is no butter in the making of this cake so you can do this with a clear conscience.
I hope you enjoy this cake, it was devoured with enthusiasm at the club camp at Porthcawl and is always enjoyed by my family.

The winner, chosen at random, was Mark Broad Holcombe, it was a cover for a splitscreen or bay with a question about a T4 won by a guy with a T6! Mark was right that it was drums initially then went to disks. Several of you got it wrong!
