GAS GRILL BOYS


                         Smoked Pork belly


                                         Ingredients


                                             Marinade

               1/4 cup jack Daniels
               3 sprigs Rosemary
               4 cloves minced garlic
               1 tbsp mustard
               3 tbsp olive oil
               2 tbsp red pepper flakes
               1 tsp black pepper
               2 lbs pork belly
                                         Lagniappe




               Mix all ingredients together

               Remove the skin from the pork belly, cut into 2” pieces and marinate in
               refrigerator
               Overnight (Save skin to make Cracklings)

               Remove from the refrigerator, pat dry and allow the meat to come to room
               temp (about 2 hours)

               Place in smoker at 225’ and smoke for about 2 hours with heavy smoke,
               complete the smoking without adding any more wood for another 2-3 hours

               Remove from smoker, tent with foil and let set for 15-20 minutes

               Pecan wood, apple, or hickory wood works best.

               Serve with your favorite dipping sauce on the side
