Pork “Burnt ends”

                                         (Ralphs Favorite)

                                         Ingredients


               3- 5 lbs Country Style Ribs
               Jeff’s Original Rub (see rubs)
               Foil pans
               Your favorite BBQ sauce

                                        Lagniappe



               Cut the pork into 1 “cubes

               Place all the pieces into a bag, Add 2-3 tbsp of vegetable oil, and ¼ cup of
               rub to the bag. Shake the bag till all the pieces are well coated and place in
               frig for 24 hours.

               Remove from the bag and place on the smoker racks in a single layer leaving
               a little space between the pieces.

               Set your smoker at 225 with pecan, apple or cherry wood, be sure and use the
               water pan in the smoker.

               Smoke the pieces 3-4 hours or until they reach 160, keeping the smoke going
               constantly.

               When the meat reaches 160, place all the pieces in a single layer in a foil pan.

               Add your favorite sauce to the top of the meat, stirring the meat well to make
               sure the pieces are well covered.

               Sprinkle Jeff’s Rub generously to the top of the meat, and again stir the
               pieces well.

               Raise the smoker temp to about 275, Place the pans back in the smoker and
               continue another 1-2 hours more stirring every 30 minutes, until the meat
               temp has reached 180 and the meat has formed a nice “Bark”
